A recipe that in this period we often propose in our “kitchen for friends” is the
Ingredients for 4 people:
1 kilo of pumpkin
salt and pepper
Cut the pumpkin into pieces and cook in a pan with onion, garlic, oil, salt and chilli; during cooking, if necessary, add some water.
When the pumpkin is cooked, blend it directly into the pot with the immersion mixer and add a little milk and salt.
Continue cooking, bring to a boil and continue to cook for 5′-10 ′.
The soup can be served with boiled and frayed chicken breast and extra virgin olive oil or with stringy cheese (such as taleggio or fontina), to be added during the last minutes of cooking. Or simply with rosemary bread croutons
