CHILLI PEPPER JAM
1 kilo of chillies
1 kilo of sugar
N.B. absolutely use gloves!
Clean peppers, removing the cap and digging, but not too much, inside (taking care to leave some seeds).
Cut them in half, rinse and put in a pot with sugar.
Cook them over low heat until the peppers are not very tender.
When cooked, blend with the immersion mixer and transfer jam to the previously sterilized glass jars.
This jam is excellent served with aged cheeses but with grilled meat too !!.
